    In a large bowl, combine the achiote paste, orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Mix well until the achiote paste is fully dissolved. Add the chicken thighs to the marinade, ensuring they are coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

    Preheat your oven to 300°F (150°C). This low temperature will help the chicken cook slowly and absorb the flavors of the marinade.

    Lay out the banana leaves or aluminum foil sheets on a clean surface. If using banana leaves, briefly heat them over an open flame to make them more pliable. Place one piece of marinated chicken on each leaf or foil.
