    Prepare the Pork

    Trim excess fat from the pork shoulder and cut it into large chunks.

    Season the Pork

    In a large bowl, season the pork chunks with salt, black pepper, cumin, and oregano. Rub the spices into the meat thoroughly.

    Add Aromatics

    Chop the onion and garlic cloves. Add them to the bowl with the seasoned pork. Mix well.

    Add Liquids

    In a slow cooker or large pot, combine the seasoned pork, chopped onion, garlic, orange juice, lime juice, bay leaves, and water. Stir to combine.

    Cook the Pork

    Cover the pot or slow cooker and cook on low for 8-10 hours or until the pork is fork-tender.

    Shred the Pork

    Once cooked, remove the pork from the pot and let it cool slightly. Shred the pork using two forks.

    Crisp the Carnitas

    Preheat your oven to 425°F (220°C). Spread the shredded pork on a baking sheet and drizzle with some of the cooking liquid. Bake for 15-20 minutes until the edges are crispy.

    Remove from the oven and serve hot with tortillas, avocado, and your favorite toppings.
