    Prepare the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.

    Toast the English Muffins

    While the bacon is cooking, split the English muffins in half and toast them until golden brown. You can do this in a toaster or under a broiler.

    Mash the Avocado

    In a small bowl, scoop out the flesh of the avocado and mash it with a fork. Add the lemon juice, salt, and black pepper to taste, mixing well until creamy.

    Poach the Eggs

    In a saucepan, bring water to a gentle simmer. Crack the eggs into small bowls. Create a gentle whirlpool in the water and carefully slide the eggs in one at a time. Poach the eggs for 3-4 minutes, or until the whites are set and the yolks are still runny. Remove them with a slotted spoon and drain them on a paper towel.

    Assemble the Benedict

    Spread the mashed avocado evenly on each half of the toasted English muffins. Layer two slices of crispy bacon on top of the avocado on each muffin half. Place a poached egg on top of the bacon on each muffin half.

    Sprinkle fresh parsley over the top for garnish. Serve immediately while the eggs are still warm.
