    Mix Dry Ingredients

    In a large mixing bowl, sift together the all-purpose flour, baking powder, salt, and sugar.

    Combine Wet Ingredients

    In another bowl, whisk together the eggs, milk, and vanilla extract until well combined.

    Combine Mixtures

    Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix; the batter should be slightly lumpy.

    Heat Oil

    In a large pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry Buñuelos

    Using a spoon, drop small portions of the batter (about 1/4 cup each) into the hot oil, frying in batches to avoid overcrowding. Fry until they are golden brown on all sides, about 3-4 minutes.

    Drain and Cool

    Remove the buñuelos from the oil using a slotted spoon and drain on paper towels to absorb excess oil.

    Prepare Cinnamon Sugar

    In a small bowl, mix together 1/2 cup of sugar with 1-2 teaspoons of cinnamon.

    Coat Buñuelos

    While still warm, toss the buñuelos in the cinnamon sugar mixture until evenly coated.
