Prepare the Rice
In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the cooked rice, corn, black beans, and spinach. Stir well to combine and sauté for 5-7 minutes until heated through. Season with salt, black pepper, garlic powder, and onion powder.

Cook the Plant-Based Salmon
In another pan, heat the remaining tablespoon of olive oil over medium heat. Add the plant-based salmon fillets and cook for about 4-5 minutes on each side, or until golden brown. Drizzle with soy sauce during the last minute of cooking.

Assemble the Dish
Divide the Mexican fried rice among plates. Top each serving with a cooked plant-based salmon fillet. Garnish with halved grape tomatoes and slices of avocado.
