Cake & Mousse

Method

Preparation

  1. 1

    Prepare the Cake

Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

  2. 2

    Mix Dry Ingredients

In a bowl, whisk together flour, baking powder, and salt.

  3. 3

    Beat Eggs and Sugar

In a separate large bowl, beat the eggs and granulated sugar until light and fluffy.

  4. 4

    Combine Mixtures

Gradually add the flour mixture to the egg mixture, alternating with the milk, until just combined.

  5. 5

    Bake the Cake

Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let it cool.

  6. 6

    Prepare the Tres Leches Mixture

In a bowl, combine sweetened condensed milk, evaporated milk, fresh lemon juice, and lemon zest.

  7. 7

    Soak the Cake

Once the cake is cool, poke holes all over the surface with a fork and pour the tres leches mixture evenly over the cake. Let it soak for at least 1 hour.

  8. 8

    Make the Lemon Mousse

In a chilled bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, then gently fold in lemon juice and zest.

  9. 9

    Layer the Dessert

Spread a layer of lemon mousse over the soaked cake. Refrigerate for at least 2 hours before serving.

  10. 10

    Serve

Slice into squares and serve chilled. Enjoy your refreshing Lemon Tres Leches!
