Prepare the Enchiladas
Preheat the oven to 350°F (175°C). In a skillet, warm the corn tortillas over medium heat until pliable. Remove from heat.

Stuff the Tortillas
Place about 1/4 cup of carnitas in the center of each tortilla. Sprinkle with shredded cheese and roll the tortilla tightly around the filling.

Arrange in Baking Dish
Place the rolled enchiladas seam-side down in a greased baking dish. Repeat until all tortillas are filled and arranged in the dish.

Add Mole Sauce
Pour the mole sauce evenly over the top of the enchiladas, ensuring they are well covered. Sprinkle any remaining cheese on top.

Bake the Enchiladas
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
