Prepare the Mixture
In a large mixing bowl, combine roasted corn, grated yucca, Chihuahua cheese, diced jalapeño, crumbled bacon, all-purpose flour, baking powder, salt, and black pepper. Mix until well combined.

Add Eggs
Add the beaten eggs to the mixture and stir until fully incorporated.

Heat Oil
In a large skillet or frying pan, heat vegetable oil over medium heat until hot.

Form and Fry Fritters
Using a spoon or scoop, drop small portions of the mixture into the hot oil. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Serve warm with your favorite dipping sauce or salsa.
