Prepare the Pineapple-Jerk Sauce
In a blender, combine diced pineapple, jerk seasoning, lime juice, salt, and pepper. Blend until smooth. Set aside.

Cook the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add the shrimp and sauté for about 3-4 minutes or until they turn pink and opaque. Pour the pineapple-jerk sauce over the shrimp and toss to coat. Cook for an additional 2 minutes.

Warm the Tortillas
In a separate pan, warm the corn tortillas on medium heat for about 30 seconds on each side until pliable.

Assemble the Tacos
To assemble, place a generous amount of sautéed shrimp on each tortilla. Top with shredded cabbage, Chihuahua cheese, chopped cilantro, and a drizzle of chipotle aioli.
