    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the fingerling potatoes. Cut them in half lengthwise and place them in a bowl.

    Season the Potatoes

    Drizzle the potatoes with olive oil, sprinkle with salt, black pepper, and chopped fresh rosemary. Mix well to coat.

    Roast the Potatoes

    Spread the potatoes out in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until golden brown and tender.

    Cook the Steak

    While the potatoes are roasting, heat a skillet over medium-high heat. Season the tenderloin steak with salt and black pepper on both sides.

    Sear the Steak

    Add a tablespoon of olive oil to the hot skillet. Once the oil is shimmering, add the steak and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness.

    Add Garlic

    During the last minute of cooking, add the crushed garlic cloves to the skillet to infuse the oil with flavor.

    Rest and Serve

    Remove the steak from the skillet and let it rest for about 5 minutes. Slice the steak and serve it alongside the roasted fingerling potatoes.
