    Prepare the Ragout

    In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.

    Add Garlic and Wild Boar

    Stir in minced garlic and diced wild boar meat. Cook until the meat is browned on all sides, about 8-10 minutes.

    Deglaze and Simmer

    Pour in the red wine, scraping the bottom of the pot. Allow it to simmer for about 5 minutes until reduced slightly.

    Add Tomatoes and Herbs

    Add crushed tomatoes, thyme, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, stirring occasionally.

    Cook the Garganelli

    In a separate pot, cook the garganelli pasta according to package instructions. Drain and set aside.

    Combine and Serve

    Once the ragout is ready, toss it with the cooked garganelli. Serve hot, topped with grated Grana Padano.
