    Prepare the Beef

    Wrap the beef tenderloin tightly in plastic wrap and freeze for about 1-2 hours until firm. This will make it easier to slice thinly.

    Make Pickled Onions

    Thinly slice the red onion and place in a small bowl. Cover with vinegar and let it sit for at least 30 minutes to pickle.

    Slice the Beef

    Remove the beef from the freezer and unwrap it. Using a sharp knife, slice the beef as thinly as possible against the grain.

    Assemble the Carpaccio

    Arrange the beef slices on a large plate or platter in a single layer. Drizzle with olive oil and balsamic vinegar.

    Scatter the pickled onions, sliced almonds, and fresh arugula over the beef. Grate or shave the Grana Padano cheese on top.
