Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until frothy.

Add the flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.

Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Filling
In a medium bowl, combine ricotta cheese, mozzarella cheese, and cooked Italian sausage. Mix well.

Season the filling with salt and pepper to taste. Set aside.

Assemble the Calzone
Preheat the oven to 450°F (230°C). Once the dough has risen, punch it down and divide it into 4 equal pieces.

Roll each piece of dough into a circle about 6 inches in diameter.

Fold the other half over the filling and seal the edges by pressing them together with a fork.

Bake the Calzone
Place the calzones on a baking sheet lined with parchment paper. Cut a few slits on top for steam to escape.

Bake in the preheated oven for about 15-20 minutes or until golden brown.

Serve
Remove from the oven and let cool slightly before serving. Serve with signature sauce on the side.
