In a large pot, combine the whole milk and heavy cream. Place the pot over medium heat and stir occasionally to prevent scalding.

Heat the milk and cream mixture until it reaches a temperature of about 190°F (88°C). Use a food thermometer for accuracy. You should see small bubbles forming around the edges, but do not let it boil.

Line a colander with cheesecloth or a clean kitchen towel and set it over a bowl to catch the whey. Carefully pour the curds and whey into the colander. Let it drain for about 15-20 minutes, or until the desired consistency is reached.
