    Marinate the Chicken

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and dried oregano. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 30 minutes.

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for about 18-20 minutes (for white rice) or 35-40 minutes (for brown rice), until the rice is cooked and water is absorbed. Fluff with a fork and set aside.

    Prepare the Vegetables

    While the rice is cooking, wash and slice the bell pepper, zucchini, and carrot into thin strips. In a large skillet over medium heat, add a splash of olive oil and sauté the vegetables for about 5-7 minutes until they are tender but still crisp. Add the spinach last and cook until wilted, about 2 minutes.

    Grill the Chicken

    Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

    Assemble the Bowl

    In a large bowl or plate, start with a base of rice. Arrange the sautéed vegetables on top of the rice. Slice the grilled chicken and place it over the vegetables. Garnish with fresh parsley and sliced avocado.
