Shrimp Preparation
Marinate the Shrimp
In a medium bowl, combine the peeled and deveined shrimp with buttermilk. Cover and refrigerate for at least 30 minutes to allow the shrimp to marinate.
Prepare the Breading
In a shallow dish, mix together cornmeal, all-purpose flour, cajun seasoning, salt, and black pepper. This will be the breading for the shrimp.
Heat the Oil
In a deep skillet or pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
Bread the Shrimp
Remove the shrimp from the buttermilk and let excess drip off. Dredge each shrimp in the cornmeal mixture, ensuring they are well-coated.
Fry the Shrimp
Carefully place the breaded shrimp in the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown. Use a slotted spoon to transfer cooked shrimp to a paper towel-lined plate to drain excess oil.
Cajun Mayo
Make the Cajun Mayo
In a small bowl, combine mayonnaise, cajun seasoning, and lemon juice. Mix well until all ingredients are blended smoothly.

Prepare the Bread
Slice the French bread or hoagie rolls lengthwise, ensuring not to cut all the way through.
Assemble the Po' Boys
Spread a generous amount of Cajun mayo on the inside of each roll. Layer mixed greens, sliced tomatoes, and pickles. Top with a handful of the fried shrimp.
Serve
Close the sandwiches and serve immediately, with extra Cajun mayo on the side if desired.
