Pulled Pork Preparation
Seasoning the Pork
In a small bowl, mix together garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this mixture all over the pork shoulder.
Cooking the Pork
In a large skillet, heat the olive oil over medium-high heat. Sear the pork shoulder on all sides until browned, about 4-5 minutes per side.
Slow Cooking
Transfer the seared pork shoulder to a slow cooker. Add bay leaves, orange juice, and lime juice. Cover and cook on low for 8 hours, or until the pork is tender and easily shreds with a fork.
Shredding the Pork
Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Discard bay leaves and mix the shredded pork with some of the cooking juices.
Sandwich Assembly
Assembling the Sandwich
Slice the Cuban bread in half lengthwise. Layer the bottom half with shredded pulled pork, followed by the sliced ham, Swiss cheese, and pickled onions.
Adding Mustard Dressing
Drizzle mustard dressing over the ingredients, then top with the other half of the Cuban bread.
Toasting the Sandwich
Place the assembled sandwich in a panini press or on a hot skillet. Press down to flatten and cook until the cheese is melted and the bread is golden brown, about 3-5 minutes.
Serving
Remove the sandwich from the heat, slice it in half, and serve hot with extra mustard dressing on the side.
