Preparation of Vegetables

Chop the Cabbage

Remove the outer leaves of the green cabbage and red cabbage. Cut both cabbages into quarters, then thinly slice them into shreds. You should have about 4 cups of shredded green cabbage and 1 cup of shredded red cabbage.

Grate the Carrot

Peel the carrot and use a box grater or food processor to grate it until you have 1 cup of grated carrot.

Slice the Green Onion

Trim the ends of the green onions and slice them thinly, using both the white and green parts.

Making the Dressing

Combine the Dressing Ingredients

In a large mixing bowl, combine 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Whisk together until smooth and well combined.

Combine Vegetables and Dressing

Add the shredded green cabbage, shredded red cabbage, grated carrot, and sliced green onions to the bowl with the dressing. Toss everything together until the vegetables are well coated with the dressing.

Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold as a side dish.
