    Prepare the Ingredients

    Chop the chuck beef into bite-sized pieces, dice the onion, mince the garlic, and chop the red bell pepper, carrots, and potatoes.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for another minute.

    Brown the Beef

    Increase the heat to medium-high and add the chuck beef to the pot. Season with salt and black pepper. Brown the beef on all sides, about 8-10 minutes.

    Add Vegetables and Spices

    Stir in the red bell pepper, carrots, and potatoes. Add paprika and caraway seeds. Mix well and cook for another 2-3 minutes.

    Simmer the Goulash

    Pour in the beef broth and add bay leaves. Bring to a boil, then reduce heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the meat is tender.

    Remove bay leaves before serving. Adjust seasoning if needed and serve hot with crusty bread or dumplings.
