    Prepare the Chicken

    Preheat your oven to 220°C (425°F). Rinse the whole chicken under cold water and pat dry with paper towels. Season the cavity with salt and pepper.

    Stuff the Chicken

    In a bowl, mix the foie gras with minced garlic, fresh thyme, and a pinch of salt and pepper. Stuff this mixture into the cavity of the chicken.

    Season and Prepare for Roasting

    Rub the outside of the chicken with olive oil, and season generously with salt and pepper. Squeeze the juice of the lemon inside the cavity and place the lemon halves inside the chicken.

    Roast the Chicken

    Place the chicken breast-side up in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 75°C (165°F). Baste the chicken with its juices halfway through cooking.

    Rest and Serve

    Once cooked, remove the chicken from the oven and let it rest for 15 minutes before carving. Serve with pan juices.
