Roast the Garlic
Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil, drizzle with 1 tablespoon of olive oil, and seal the foil. Roast in the oven for about 30 minutes, or until the cloves are soft and golden brown.

Prepare the Peppers
While the garlic is roasting, wash and slice the sweet peppers into halves or quarters, removing the seeds and stems.

Marinate the Peppers
In a large bowl, combine the sliced sweet peppers, olive oil, salt, black pepper, and fresh herbs. Toss well to ensure the peppers are evenly coated with the marinade.

Combine with Roasted Garlic
Once the garlic is roasted, allow it to cool slightly, then squeeze the soft cloves out of their skins and mix them into the marinated peppers.

Let the peppers marinate for at least 30 minutes before serving to enhance the flavors. Serve at room temperature as a delicious appetizer or side dish.
