    Prepare the Sole

    Pat the Dover sole fillets dry with a paper towel. Season both sides with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until melted and hot.

    Cook the Sole

    Add the fillets to the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the fillets and set aside.

    Make the Sauce

    In the same skillet, add the remaining butter and the sliced almonds. Cook for 2-3 minutes, stirring frequently until the almonds are golden.

    Add Mustard

    Stir in the mustard and a splash of water to create a sauce, cooking for an additional minute.

    Combine and Serve

    Return the sole fillets to the skillet, spoon the almond-mustard sauce over them, and cook for another minute to warm through. Garnish with chopped parsley and serve with lemon wedges.
