    Prepare the Fillets

    Rinse the Dover sole fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and bubbling.

    Cook the Sole

    Add the seasoned Dover sole fillets to the skillet. Cook for about 3-4 minutes on one side until golden brown, then carefully flip and cook for another 3-4 minutes on the other side until cooked through.

    Add Mustard and Finish

    Once the fish is cooked, reduce the heat and add the grain mustard and remaining 2 tablespoons of butter to the skillet. Stir gently to coat the fish in the mustard sauce.

    Serve

    Remove the pan from heat, squeeze fresh lemon juice over the fish, and garnish with chopped parsley before serving.
