    Prepare the Ingredients

    Rinse the Dover sole fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper. Set aside.

    Toast the Almonds

    In a large skillet, heat 1 tablespoon of butter over medium heat. Add the sliced almonds and toast them for about 3-4 minutes, stirring frequently, until they are golden brown. Remove the almonds from the skillet and set aside.

    Cook the Mustard Seeds

    In the same skillet, add the olive oil and the mustard seeds. Cook for about 2 minutes until they start to pop. Be cautious not to let them burn.

    Pan-Fry the Sole

    Add the remaining butter to the skillet and increase the heat to medium-high. Place the seasoned Dover sole fillets in the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and cooked through.

    Combine and Serve

    Once the fish is cooked, drizzle lemon juice over the fillets and sprinkle the toasted almonds and mustard seeds on top. Serve immediately.
