    Prepare the Sea Bass

    Preheat your oven to 400°F (200°C). Rinse the sea bass under cold water and pat it dry with paper towels. Season the inside of the fish with black pepper and stuff it with lemon slices and fresh rosemary.

    Make the Salt Crust

    In a bowl, mix together the coarse sea salt and egg whites until the salt resembles wet sand. This will be your salt crust.

    Prepare the Baking Dish

    Spread a thin layer of the salt mixture on a baking tray to create a base for the fish.

    Combine Ingredients

    Place the prepared sea bass on top of the salt base. Cover the fish completely with the remaining salt mixture, pressing it down to form a solid crust.

    Bake

    Bake the salt-crusted fish in the preheated oven for about 25-30 minutes, depending on the size of the fish.

    Prepare the Vegetables

    While the fish bakes, toss the artichoke hearts and cherry tomatoes in a bowl with olive oil, salt, and pepper. Set aside.

    Serve

    Once the fish is cooked, remove it from the oven and let it rest for 5 minutes. Carefully crack open the salt crust and remove the fish. Serve with the roasted artichokes and tomatoes.
