    Prepare the Pork

    Preheat your oven to 160°C (320°F). Rub the sagabuta pork shoulder with olive oil, minced garlic, salt, and black pepper. Place the pork in a roasting pan.

    Roast the Pork

    Cover the pork with foil and roast in the preheated oven for about 2.5 hours, or until the internal temperature reaches 70°C (160°F). Remove the foil for the last 30 minutes to let the top brown.

    Make the Chimichurri

    In a bowl, combine the chopped parsley, red wine vinegar, dried oregano, red pepper flakes, lemon juice, and a pinch of salt. Mix well and adjust seasoning to taste.

    Serve

    Once the pork is cooked, let it rest for 10-15 minutes before slicing. Serve the slices drizzled with chimichurri sauce on top.
