    Make the Dough

    In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.

    Prepare the Onions

    In a large skillet, heat olive oil over medium heat. Add sliced onions and cook slowly until they are caramelized, about 30 minutes. Stir occasionally, add salt and pepper to taste.

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Assemble the Tart

    Roll out the chilled dough on a floured surface to fit a tart pan. Place the rolled dough in the pan. Spread the caramelized onions evenly over the dough. Arrange the anchovy fillets in a decorative pattern on top and sprinkle with olives and thyme.

    Bake

    Beat the egg and brush it over the exposed crust. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.

    Cool and Serve

    Allow the tart to cool for a few minutes before slicing. Serve warm or at room temperature.
