    Prepare the Sole

    Pat the Dover sole fillets dry with paper towels. Season both sides with salt and black pepper.

    Make the Mustard Mixture

    In a small bowl, mix the Dijon mustard with lemon juice and half of the chopped parsley. Set aside.

    Cook the Almonds

    In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat. Add the sliced almonds and sauté until golden brown. Remove from the skillet and set aside.

    Pan Fry the Sole

    In the same skillet, add the remaining butter and olive oil. Once hot, add the seasoned Dover sole fillets. Cook for about 3-4 minutes on each side, or until golden and cooked through.

    Combine with Mustard Mixture

    Once the sole is cooked, lower the heat and add the mustard mixture to the skillet, coating the fillets gently.

    Serve

    Transfer the Dover sole to a serving plate, sprinkle the sautéed almonds on top, and garnish with the remaining parsley.
