Oysters with Smoked Tabasco and Crispy Quinoa

Prepare the Quinoa
Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa, water, salt, and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy. Remove from heat and let it cool.

Crispy Quinoa
Once the quinoa is cool, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the cooked quinoa and spread it evenly in the pan. Cook until golden and crispy, about 5-7 minutes, stirring occasionally. Transfer to a paper towel to drain excess oil and season with black pepper.

Prepare the Smoked Tabasco
In a small bowl, mix the Tabasco sauce with smoked paprika. Adjust the amount of smoked paprika to taste.

Serve the Oysters
Shuck the oysters and place them on a serving platter. Drizzle the smoked Tabasco mixture over the oysters and top with crispy quinoa. Serve with lemon wedges on the side.
