Prepare the Marinade

In a bowl, combine olive oil, lemon juice, minced garlic, thyme, salt, black pepper, paprika, and honey. Whisk until well combined.

Marinate the Chickens

Place the baby chickens in a large zip-top bag or a bowl. Pour the marinade over the chickens, ensuring they are well coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.

Preheat the Oven

Preheat your oven to 375°F (190°C).

Bake the Chickens

Remove the chickens from the marinade and place them on a baking sheet lined with parchment paper. Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.

Rest and Serve

Once cooked, remove the chickens from the oven and let them rest for 10 minutes before carving. Serve with your choice of sides.
