Pasta and Seafood
Method
Preparation and Cooking
- 1
Make the Mafaldine Pasta
In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well. Gradually mix the flour into the eggs using a fork until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.
- 2
Roll and Cut Pasta
After resting, divide the dough into four pieces. Roll each piece out thinly using a pasta machine or rolling pin. Cut the rolled dough into strips and then shape them into mafaldine by creating ruffles on the edges using a knife or pasta cutter.
- 3
Cook the Pasta
Bring a large pot of salted water to a boil. Cook the mafaldine pasta for about 3-4 minutes or until al dente. Drain and set aside, reserving a little pasta water.
- 4
Prepare the Seafood Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant. Add the squid and prawns, cooking until they turn opaque. Stir in the cherry tomatoes and cook for another 3-4 minutes until they soften.
- 5
Combine and Serve
Pour in the white wine and let it simmer for a few minutes. Add the cooked mafaldine pasta to the skillet, tossing everything together. If the sauce is too thick, add a little reserved pasta water. Season with black pepper and stir in the chopped parsley before serving.
