Season the lamb shanks with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat. Brown the lamb shanks on all sides, about 8-10 minutes. Remove and set aside.

Add Broth and Herbs
Stir in the beef broth, bay leaves, and thyme. Return the lamb shanks to the pot, ensuring they're submerged in the liquid.

Braise
Cover the pot and reduce the heat to low. Let the lamb shanks braise for 2-3 hours, or until the meat is tender and falling off the bone.

Remove the lamb shanks from the pot and let them rest for a few minutes. Serve with the braising liquid and vegetables.
