Preparation and Cooking
Make the Mafaldine Pasta
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Mix with a fork until combined, then knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
Roll and Cut the Pasta
After resting, roll out the dough using a pasta machine or a rolling pin until it's about 1/8 inch thick. Cut the dough into 1-inch wide strips, then use a knife or pasta cutter to create the traditional mafaldine shape with ruffled edges.
Cook the Pasta
Bring a large pot of salted water to a boil. Cook the mafaldine for 3-4 minutes until al dente. Drain and set aside.
Prepare the Seafood Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add squid and prawns, and cook for about 3-4 minutes until they start to turn pink.
Combine and Finish the Dish
Add cherry tomatoes and white wine to the skillet, simmering for about 5 minutes until the sauce thickens slightly. Toss in the cooked mafaldine, fresh parsley, salt, and black pepper. Mix well to coat the pasta with the sauce. Serve hot.
