Marinate the Veal
In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice. Add the veal chops and ensure they are well coated in the marinade. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Preheat the Grill
Preheat your grill to medium-high heat.

Grill the Chops
Remove the veal chops from the marinade, allowing excess marinade to drip off. Place the chops on the grill and cook for about 6-8 minutes per side for medium-rare, or until they reach your desired doneness.

Rest and Serve
Once cooked, remove the veal chops from the grill and let them rest for about 5 minutes before serving. This allows the juices to redistribute.
