    Prepare the Lemon Confit

    In a small saucepan, combine the sliced chilies, sliced garlic, lemon zest, and olive oil. Cook over low heat for about 10 minutes until the garlic is fragrant and soft but not browned. Remove from heat and set aside to cool.

    Marinate the Chilean Bass

    In a bowl, whisk together olive oil, fresh lemon juice, salt, and black pepper. Add the Chilean bass fillets, ensuring they are well coated. Allow to marinate for 15 minutes.

    Grill the Chilean Bass

    Preheat the grill to medium-high heat. Grill the marinated Chilean bass for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

    Serve

    Plate the grilled Chilean bass and drizzle the chili and lemon confit over the top. Garnish with chopped parsley and serve immediately.
