Preparation and Grilling

    Marinate the Fish

    In a bowl, whisk together the olive oil, lemon juice, chili powder, minced garlic, salt, and black pepper. Add the Chilean bass fillets and coat them well with the marinade. Let them marinate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.

    Grill the Chilean Bass

    Remove the fillets from the marinade and place them on the grill. Grill for about 4-5 minutes on each side, or until the fish is cooked through and has nice grill marks.

    Serve

    Once cooked, remove the bass from the grill and garnish with fresh parsley. Serve with lemon confit on the side.
