Preparation Steps
Prepare the Potatoes
Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch, then pat dry with a clean towel.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.
Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-6 minutes until they are golden and crispy. Remove with a slotted spoon and drain on paper towels.
Prepare the Garlic and Rosemary
While the fries are frying, finely chop the garlic cloves and fresh rosemary.
Season the Fries
In a large bowl, toss the hot fries with the chopped garlic, rosemary, salt, and black pepper. Adjust seasoning to taste.
