Prep the Potatoes
Peel the Russet potatoes and cut them into thin strips to form fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure crispy fries.

Drain and Dry
After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

Season the Fries
In a large bowl, combine the dried potato strips with olive oil, chopped rosemary, minced garlic, salt, and black pepper. Toss until the fries are evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
