Prepare the Foie Gras
Carefully clean the foie gras, removing any veins or impurities. Cut it into large pieces and place them in a bowl.

Season the Mixture
Sprinkle the foie gras with salt and white pepper. Add the Armagnac or Cognac and mix gently. Let it marinate for about 1 hour at room temperature.

Melt the Gelatin
Soak the gelatin sheets in cold water for about 5 minutes until softened. Then, gently heat the chicken stock and dissolve the softened gelatin in it.

Blend the Mixture
In a food processor, blend the marinated foie gras until smooth. Slowly add the gelatin mixture while blending until fully incorporated.

Prepare the Terrine Mold
Line a terrine mold with plastic wrap, leaving enough overhang to fold over the top later. Pour half of the foie gras mixture into the mold and smooth it out.

Chill the Terrine
Cover the mixture with plastic wrap and refrigerate for at least 24 hours, allowing the flavors to meld and the terrine to set.

Slice and Serve
Once set, remove the terrine from the mold by lifting the plastic wrap. Slice with a hot knife and serve with toasted brioche.
