Preparation
1. Soak the Cod
Rinse the salt cod under cold water, then soak it in water for 24 hours, changing the water several times.
2. Prepare the Filling
Drain the cod, then boil it in fresh water for about 15 minutes until tender. Remove from heat, allow to cool, and flake the fish into small pieces. In a frying pan, heat a tablespoon of olive oil over medium heat and sauté the onion and garlic until softened. In a bowl, combine the flaked cod, mashed potatoes, sautéed onions and garlic, parsley, salt, and pepper. Mix well.
3. Form the Croquettes
Beat the eggs in a shallow dish. Form the cod mixture into small balls or cylinder shapes, dip them in flour, then the beaten eggs, and finally coat with bread crumbs.
4. Fry the Croquettes
In a large frying pan, heat the olive oil over medium-high heat. Fry the croquettes in batches until golden brown on all sides, about 3-4 minutes per side. Remove and drain on paper towels.
5. Serve with Roasted Pepper Relish
Serve the croquettes hot with a side of roasted pepper relish.
