Preparation

    Cook the Potatoes

    In a pot of salted boiling water, cook the cubed potatoes until tender, about 15 minutes. Drain and let cool.

    Prepare the Fish

    In a pan, poach the Chilean sea bass in simmering water for about 10 minutes or until cooked through. Allow to cool, then flake into small pieces.

    Mix Ingredients

    In a large bowl, combine the cooled potatoes, flaked fish, eggs, flour, parsley, garlic, salt, and pepper. Mix until well combined.

    Form Croquettes

    Shape the mixture into small patties or balls, about 2 inches in diameter. Roll each croquette in bread crumbs to coat.

    Fry the Croquettes

    In a large skillet, heat the olive oil over medium heat. Fry the croquettes in batches until golden brown and crispy, about 4-5 minutes per side.

    Serve

    Remove the croquettes from the skillet and place on a paper towel to drain excess oil. Serve warm with roasted pepper relish.
