Marinate the Chicken
In a large bowl, whisk together the lemon juice, lemon zest, minced garlic, fresh thyme, olive oil, salt, and black pepper. Add the baby chickens, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 200°C (400°F).

Sear the Chicken
In a large skillet, melt the butter over medium-high heat. Remove the chickens from the marinade and sear them in the skillet for about 5-7 minutes on each side, until golden brown.

Roast the Chicken
Transfer the seared chickens to a roasting pan, and pour the chicken broth around them. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 75°C (165°F).

Rest and Serve
Let the chickens rest for 10 minutes before carving. Serve with the pan juices drizzled over the top.
