Cooking the Pasta

Boil the Pasta
Bring a large pot of salted water to a boil. Add 2 cups of penne pasta and cook according to package instructions until al dente, about 10-12 minutes.

Drain the Pasta
Once cooked, drain the pasta in a colander and set aside.
Preparing the Vegetables

Chop the Vegetables
While the pasta is cooking, wash and chop 1 medium zucchini and 1 medium bell pepper into bite-sized pieces. Cut the cherry tomatoes in half. Rinse 2 cups of spinach and set aside.

Sauté the Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 1-2 minutes until fragrant.

Cook the Vegetables
Add the chopped zucchini, bell pepper, and halved cherry tomatoes to the skillet. Sauté for 5-7 minutes until they are tender. Add the spinach and cook for an additional 2-3 minutes until wilted.
Combining Ingredients

Mix Everything Together
Add the drained penne pasta to the skillet with the sautéed vegetables. Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Toss everything together to combine well.

Serve the vegetarian pasta hot, optionally topped with grated Parmesan cheese if desired.
