Method
Prepare the Rice

Cook the Rice
In a large pot, combine 4 cups of water and 2 cups of white rice. Add salt to taste. Bring to a boil, then reduce heat to low. Cover and simmer for about 18-20 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Make the Étouffée

Sauté the Vegetables
In a large skillet or saucepan, heat a tablespoon of oil over medium heat. Add 1 cup each of diced onion, bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are soft and translucent.

Add Garlic
Mince 2 cloves of garlic and add to the sautéed vegetables. Cook for an additional 1-2 minutes until fragrant.

Add Tomatoes and Crawfish
Pour in 2 cups of canned diced tomatoes with their juices and add 1 pound of crawfish tail meat. Stir to combine.

Add Broth and Cream
Pour in 1 cup of chicken broth and 1 cup of heavy cream. Stir well and bring the mixture to a gentle simmer.

Season the Sauce
Sprinkle in 1 tablespoon of Cajun seasoning, and add salt and black pepper to taste. Let the sauce simmer for about 15 minutes, stirring occasionally, until it thickens slightly.
Serve

Plate the Dish
Spoon a generous amount of the crawfish étouffée over a bed of the prepared white rice. Serve hot.
