Prepare the Remoulade Sauce

    Make the Sauce

    In a medium bowl, combine mayonnaise, Dijon mustard, lemon juice, Cajun seasoning, minced garlic, and hot sauce. Mix well until smooth. Set aside to allow flavors to meld.

Cook the Seafood and Sausage

    Cook the Andouille Sausage

    In a large skillet over medium heat, add the sliced Andouille sausage. Cook for about 5 minutes until browned and crispy. Remove from the skillet and set aside.

    Cook the Shrimp and Crawfish

    In the same skillet, add the shrimp and crawfish. Cook for about 3-4 minutes until the shrimp turn pink and opaque. Stir occasionally. Return the Andouille sausage to the skillet and mix well. Remove from heat.

Assemble the Po Boys

    Prepare the Bread

    Slice the French bread rolls lengthwise, making sure not to cut all the way through. Lightly toast the insides if desired.

    Build the Sandwiches

    Spread a generous amount of the remoulade sauce on both sides of the bread. Fill each roll with a mixture of the seafood and sausage. Top with shredded lettuce and sliced tomatoes.
