For the Ribeye Steak

    Prepare the Steak

    Take the ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Season the Steak

    Rub the steak with olive oil, then season both sides generously with salt and black pepper. Mince the two garlic cloves and sprinkle them on top.

    Preheat the Pan

    Heat a cast-iron skillet over medium-high heat until hot. You can add a little olive oil if needed to prevent sticking.

    Cook the Steak

    Place the steak in the hot skillet and sear for about 4-5 minutes on one side without moving it. Flip the steak and add rosemary sprigs to the pan. Cook for an additional 3-4 minutes for medium-rare.

    Rest the Steak

    Remove the steak from the pan and let it rest for 5 minutes before slicing. This helps retain the juices.

For the Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Prepare the Garlic

    While the potatoes are boiling, peel the four garlic cloves and add them to the pot for the last 5 minutes of cooking.

    Mash the Potatoes

    Drain the potatoes and garlic, then return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Spoon the garlic mashed potatoes onto plates and serve alongside the sliced ribeye steak.
