Bean Preparation

    Soak the Beans

    In a large bowl, soak the red beans in water for at least 8 hours or overnight to soften them.

    Sauté the Vegetables

    In a large pot, heat a tablespoon of oil over medium heat. Add the diced yellow onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Add the Sausage

    Slice the andouille sausage into rounds and add it to the pot. Cook for an additional 5-7 minutes until the sausage is browned.

    Combine Ingredients

    Drain and rinse the soaked red beans and add them to the pot. Pour in the chicken broth, bay leaves, cayenne pepper, paprika, salt, and black pepper. Stir to combine.

    Slow Cook

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth or water if necessary.

Rice Preparation

    Rinse the Rice

    In a fine mesh strainer, rinse the white rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and water is absorbed.

    Fluff the Rice

    Remove the saucepan from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
