Preparation of Oysters

Select and Clean Oysters
Choose fresh Chesapeake oysters, ensuring they are fully closed. Rinse them under cold running water to remove any sand or debris.

Shuck the Oysters
Using an oyster knife, carefully insert the knife into the hinge of the oyster and twist to open. Slide the knife along the top shell to cut the muscle and remove the top shell. Leave the oyster meat attached to the bottom shell.

Prepare the Plate
Arrange the shucked oysters on a serving plate, preferably over crushed ice to keep them chilled.

Add Condiments
In small bowls, serve the horseradish, cocktail sauce, and Crystal's hot sauce. Cut the lemon into wedges for garnish.
