Olive Salad Preparation
Prepare the Olive Salad
In a mixing bowl, combine the green olives, black olives, celery, red bell pepper, and minced garlic.
Add Dressing
Drizzle with olive oil and red wine vinegar. Sprinkle with oregano, salt, and black pepper. Mix well to combine.
Marinate
Cover the bowl and let the olive salad marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
Sandwich Assembly
Slice the Focaccia
Take the focaccia bread and slice it horizontally to create a top and bottom half.
Layer the Meats and Cheese
On the bottom half of the focaccia, layer the Genoa salami, ham, and provolone cheese evenly.
Add Olive Salad
Spoon a generous portion of the prepared olive salad over the meats and cheese.
Close the Sandwich
Place the top half of the focaccia over the olive salad to complete the sandwich.
Press and Slice
Press down gently on the sandwich to compact it slightly, then slice into individual servings.
