Blackened Redfish

Prepare the Redfish
Pat the redfish fillets dry with paper towels. Rub Cajun seasoning on both sides of the fillets.

Cooking the Redfish
Heat the olive oil in a skillet over medium-high heat. Once hot, add the seasoned redfish fillets and cook for about 4-5 minutes on each side until blackened and cooked through. Serve with lemon wedges.
Parmesan Mushroom Risotto

Prepare the Broth
In a saucepan, heat the chicken or vegetable broth over low heat to keep warm.

Add Mushrooms and Cheese
Stir in the sliced mushrooms halfway through cooking. Once the rice is done, remove from heat and stir in the grated Parmesan cheese, salt, and black pepper.
Sautéed Spinach

Cook Spinach
Add fresh spinach to the pan and sauté until wilted, about 3-4 minutes. Season with salt and black pepper to taste.
Tarragon Cream Sauce

Prepare the Sauce
In a saucepan over medium heat, combine heavy cream, minced garlic, and salt. Bring to a gentle simmer.

Add Tarragon
Stir in chopped tarragon and black pepper. Cook for an additional 2-3 minutes until slightly thickened.
Fried Okra

Fry the Okra
Heat vegetable oil in a deep skillet over medium-high heat. Fry the breaded okra in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.
